On the palate it is light, fresh and fruity, with elegant floral nuances. The tannins are fine and vibrant, giving the wine dynamism. It finishes with a medium, clean and very pleasant finish.

Vision, determination, talent: these are the qualities that define the new generation of Burgundy winemakers. The financial risk is more than sublimated by wines that are an hymn to depth, integrity, and precision. This entire philosophy is revealed, with a degree of precision unmatched even among the new Burgundian winemakers, in the artisanal and meticulously crafted manner in which Domaine La Chaume des Lies elaborates its wines.
Born out of the passion and shared path taken by Margaux Rivaux and Lothar Galloo, who met in 2018, while working at the renowned Maison en Belles Lies in Saint-Aubin, the project adheres strictly to the principles of organic and biodynamic viticulture, continually enhanced by a strong connection to its Burgundian roots as well as the spirit of mutual support demonstrated by the region’s producers who share the same philosophy.
Based in the small village of Baubigny, located in the Hautes-Côtes de Beaune, the vineyards span approximately 4.5 hectares spread across several appellations, including Bourgogne Aligoté, Bouzeron, Saint-Aubin, Auxey-Duresses, and Hautes-Côtes de Beaune. Rivaux and Galloo seek to further enhance the agricultural diversity of all these regions, ensuring that their vineyards are not only integrated with pastures and livestock farming but also prioritizing plant-based preparations – rejecting the use of synthetic chemicals – in order to promote the strengthening of the biological, physical, and chemical processes occurring within the soil.
In the cellar, intervention is minimal and guided by a deep respect for the grapes that grow from the soil, so that each parcel can be studied in its natural diversity, that is, in its authenticity. Thus, with spontaneous fermentation and the use of sulfites reduced to what is strictly necessary, certain experiments can be undertaken, such as the extended aging of some white wines, which blend depth and precision with freshness and elegance.
La Chaume des Lies therefore establishes itself as one of the most promising wineries of Burgundy’s new generation, where energy, sensitivity, and respect for the land translate into authentic wines brimming with personality. Tension, dynamism, and a well-defined style – a vintage, a grape variety, and a bottle crafted by the duo Rivaux and Galloo transport us to the future of Burgundy, which is to say, to the excellence of the past poured into the pleasure of our present.
On the nose, a complexity of juniper and lavender immediately stands out. Then forest aromas emerge, with hints of resin, wet leaves and herbs. Its great minerality gives it a mountain soul, invigorating, silky and captivating.
Very complex, structured, with the fruit well integrated into the acidity. If you have the patience, decant it for about an hour, and you'll see a well-marked development of citrus and salinity.
This wine has an evolved colour, with aromas of pine resin, honey and low scrubland vegetation. Its tannins are fine, and it shows complex flavours resulting from the diversity of grape varieties. It has a long finish. Its acidity and dryness prepare the palate for meat dishes with spicy sauces. It also proves to be a great partner for sheep's milk cheese.
In this skin-contact version, Trajadura gains nuances of cooked white fruit on the palate, and citrus tones on the nose. It can be cellared for several good years.
An elegant red wine, with notes of black fruit, floral aromas and subtle touches of spice. On the palate it is juicy and fresh. The tannins are precise and it reveals a vibrant acidity. The finish is deliciously spicy.
Dark-hued Grolleau, sourced from a small parcel of schist and quartz. Rebellious character, and rustic on the nose. In the mouth, it reveals nuances of dark fruit and a kind of acidity that confers the wine an irresistible balance. Gastronomic wine. Serve a bit chilled.

A generous and expressive Pinot Noir, showcasing ripe red fruits wrapped in subtle spice notes.On the palate it is vibrant and juicy, with fine tannins and bright acidity that bring balance and precision. The velvety texture, combined with a subtle freshness, results in an elegant and very harmonious wine, with a captivating finish.
An elegant and highly expressive Chardonnay. On the nose, citrus, floral and mineral notes stand out, revealing aromatic purity and precision.On the palate it shows the classic structure of a Burgundian Chardonnay, with good volume and creamy texture, full of freshness. Yellow fruit flavours stand out, enveloping the palate and giving the whole a delicious, exuberant character. Harmonious and lingering finish.
Aligoté, with an intense and very precise profile. On the nose, mineral and stony notes stand out, wrapped in touches of lemon and white flowers.On the palate it shows more body than usual for the variety, lending structure and persistence, without losing its fresh and taut identity. A distinctive style, which reflects well the singularity of Bouzeron's Aligoté compared to the rest of the region.
A pure and expressive Gamay. On the nose, fresh wild red fruits stand out, wrapped in floral notes of hibiscus and violet, along with subtle touches of sweet spice.On the palate it is fresh, intense and elegant, with a silky texture that lends the whole great harmony. A balanced and very appealing wine.
The carbonic maceration of this macerated Grüner Veltliner reveals a funky, vibrant, electric side. Its elegance, minerality and low alcohol content (10.5%) make it a real challenge to stop drinking.
Very aromatic on the nose, showing wild fruits and dried flowers. Dense and spicy in the mouth, with very delicate tannins. Conveying a lot of personality. It is advisable to decant.
An old-school kind of wine. On the nose, it shows a complex fusion of tangerine peel, pear, and dried fruits. In the mouth, we feel the rustic, imposing energy, a mixture of power and vivacity. The finish is long and assertive. Ideal to pair with savory, elaborate dishes.
