Inheriting an 8-hectare vineyard placed on Fabien Forest the enormous responsibility of managing a property that has belonged to the family for five generations. Despite his classical training in oenology and viticulture, this young grower in his thirties understood that the best way to honour the family's legacy would be to work the soils and the vines as naturally as possible, so that the coming generation could inherit an intact ecological system, that is, completely free of any chemical product. His mission, so far, has been fully accomplished.
Since his first harvest, in 2017, Fabien has practised sustainable organic farming. That is, he promotes biodiversity in the vineyard through plant polyculture, encouraging biological interactions among the living beings that make up the property's habitat, thereby fostering a self-regulating ecosystem. In this way, the soil is worked as naturally as possible. Work in the vineyard is done with the help of a horse, which avoids pollution and helps preserve the soil.
All these farming practices are applied at the heart of the Beaujolais region, in the iconic town of Lantignié, which for over a thousand years has been recognised for the quality of its wines, born of very diverse terroirs. For Fabien, commitment to the vineyard must be total, so that the harvested grapes reach the winery in perfect health, and vinification is carried out with as little intervention as possible. In the winery, Fabien uses semi-carbonic macerations of more than three weeks, with whole clusters. He uses concrete vats and used wooden barrels. His wines are neither fined nor filtered.
