Attractive amber colour. Olfactory complexity with citrus, plum, ginger and hazelnut aromas. On the palate its structure and tannins balance the not-too-pronounced sweetness, adding complexity to the whole. Long and persistent finish. Serve chilled. 0.50 L bottle.

Colheita (método): Manual harvest in the vineyards of the Sorio hills.

Vinificação: The grapes are destemmed and dried, remaining in a sheltered place for 3 months arranged in vertical nets, which allow plenty of air circulation. The grapes are then lightly crushed and, since wild yeasts are not active in winter due to the cold, a small quantity is placed in a warm spot (an open wood-fired oven) to stimulate fermentation. The wine is then transferred to a vat where it remains for 15 days, undergoing alcoholic fermentation and maceration.

Envelhecimento: 5 years in a 1000L oak barrel, giving rise to a sweet wine with 86 grams of residual sugar.
